Courgette-banana bread

The COURGETTE season is still underway. How do we in huerta use them? We make soups - vegetable broth and thick cremes (they are really refreshing when you eat them cold in hot days), ratatouille, we mix them with leeks and cook lentils or beans with them. And you can use them also for sweet baking, they make the pastry smooth, as when you use apples or carrots. Here a recipe for:  

Courgette-banana bread

1 large very ripe banana (universal for vegan baking - ripe bananas are a good way how to replace egg/s)
1/4 cup apple juice or water
1/4 cup oil
3/4 cup sugar
1 cup grated courgette
1 1/2 cups flour 
1 teaspoon cinnamon
3/4 teaspoon salt
1/2 chopped walnuts or another nuts
1/2 cup raisins or another dry fruits (I used dates)

In a bowl, mash the banana well. Add the juice/water, oil, sugar and mix it well. Mix with the grated courgette.
Mix flour, cinnamon and salt, mix little by little into the courgette-banana mixture. Add the walnuts and dry fruits at the end.
Transfer batter to the greased pan and bake.
